Mudergy Bars: Homemade energy bar recipe

You can continue paying $2 for a run of the mill energy bar or you can make your own! I just made this energy bar recipe up from scratch from ingredients we already had in the fridge and in the pantry. They are super tasty and loaded with protein goodness.

Put in food processor:
1/2 C roasted pumpkin seeds
1 C cashews (roasted or raw)
1/2 C almonds
1/2 C pecans
1/2 C peanuts (preferably raw)
Grind into a fine meal, should start to become somewhat clumpy. Then pour into mixer.

1 C unsweetened shredded coconut
1/2 C flax meal
5 T honey
1/4 C maple syrup
1 t arrowroot powder
1 t spirulina (not critical, but a nice bonus if you have it)
1/8 C cocoa powder
Mix thoroughly and then dump onto a large piece (approx 18″ long) of parchment or wax paper. Fold the paper over and smush or roll into an even thickness, then slice and wrap in wax paper and store in freezer or refrigerator. Makes approximately 18 2.5″ x 1″ x .25″ bars.
